What's better than chocolate muffins?? Double Chocolate Banana Muffins, of course!! :)
Kids will love these!
double-chocolate-banana-muffins
from Food.com1 1/2 cups flour
1 cup sugar (used 3/4 cup)
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 1/3 cups mashed ripe bananas
1/3 cup vegetable oil (used Canola)
1 egg
1 cup miniature semisweet chocolate chips (used regular)
In a large bowl, combine the first six ingredients.
In a small bowl, combine bananas, oil and egg.
Stir into dry ingredients just until moistened.
Fold in chocolate chips.
Fill greased or paper lined muffin cups three fourths full.
Bake at 350 deg F for 20-25 minutes or until muffins test done.

These are my go-to banana muffins now! Thank you!
I used King Arthur whole wheat flour for all the APF,I used 1/2 cup sucanat for the sugar and Nutiva extra virgin coconut oil for all the oil. I added 2 Tbl. chia seeds and 2 Tbl. flax meal.I also added 1/2 tsp espresso grind coffee.

oh I also added the sugar as a wet ingredient and not a dry. Great recipe.
