Banana Nutella Muffins

IMG_6324_edited-1 It is so hot and humid lately, that the bananas I buy get ripe much too fast! I get to try many new recipes with bananas as I hate to waste food!

I saw these on pinterest and I knew I would love the mix of banana and Nutella!

After putting them in the oven, I panicked... thought I had forgotten the sugar... but there is none in this recipe!! The muffins are not too sweet - if you like your muffins on the sweet side, you should add a bit of sugar or frost the muffins with Nutella!

Banana Nutella Muffins from sweetpeaskitchen

Ingredients:
  • 2 cups unbleached all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 3 very ripe bananas, soft, darkly speckled, mashed well (about 1 1/2 cups)
  • 1/4 cup plain yogurt
  • 2 large eggs, beaten lightly
  • 6 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1/4 cup toasted hazelnuts, coarsely chopped (didn't add)
  • 1/4 cup Nutella 

Directions:
  1. Heat oven to 350 degrees. Line 12 muffin cups with muffin liners or spray with nonstick cooking spray.
  2. In a large bowl combine flour, sugar, baking soda, and salt; set aside.
  3. In a medium bowl mix mashed bananas, yogurt, eggs, butter, and vanilla with wooden spoon. Lightly fold banana mixture into dry ingredients with rubber spatula until just combined and batter looks thick and chunky. Fold in hazelnuts.
  4. Divide batter equally among prepared muffin cups. Place 1 teaspoon of Nutella on top of each muffin. Swirl with a toothpick. Bake until golden and toothpick inserted into center of muffin comes out clean, 20 to 24 minutes. Remove muffins from tin and serve

Yields: 12 muffins
Prep Time: 20 minutes

Bake Time: 24 minutes

Strawberry Nutella Muffins

What a sunny beautiful weekend!! The sun was out both Saturday and Sunday! Managed to do my lawn and clean the yard yesterday and washed some windows today. IMG_5435_edited-1 Went for a 7km run today and yesterday, my longest run ever, did a 11km run!! I was so happy that I managed to run more than my usual 7 km!! IMG_5510_edited-1
This morning, we went for a long walk in the Botanical Garden park - many photos to come! IMG_5436_edited-1 Also this morning, I baked these cute muffins - a mix of strawberries and nutella - should be delicious! (As I didn't have one yet!) Strawberry Nutella Muffins

Makes 9 muffins

1 1/2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar
1/4 cup canola oil
1 large egg
1/3 cup buttermilk (used low-fat milk and lemon juice)
1 teaspoon vanilla extract
1 cup chopped fresh strawberries
1/3 cup Nutella
Turbinado sugar, for sprinkling on top of muffins

1. Preheat oven to 350 degrees. Line a muffin tin with paper liners or grease well. Set aside.
2. In a medium bowl, whisk together the flour, salt, baking powder, and sugar.
3. In a small bowl, combine canola oil, egg, buttermilk, and vanilla together. Use a fork or whisk and mix until well combined.
5. Incorporate the wet ingredients into flour mixture. Add slowly and gently stir, you don’t want to over mix. The batter will be thick. Carefully fold in the strawberries.
6. Fill each muffin cup half way with batter. Next, add a small spoonful of Nutella to each muffin cup. Cover the Nutella filling with the remaining batter. Sprinkle each muffin with turbinado sugar.
7. Bake muffins for 17-20 minutes, or until muffins are golden brown and a toothpick comes out clean. Remove the muffins from the pan and let cool on a cooling rack
