Chocolate Chip Muffins

It has been a while since I blogged about muffins. At least a week or so!

It's not that I haven't baked, it's just I didn't have time to post or didn't have time to take any photos before the muffins were gone!!

For my comeback, I thought I would try some chocolate chips muffins - my favorite kind of muffins!

These were good, though they came out a bit dry - next time I will bake them around 20 minutes - 30 minutes was way too long in my oven!

Golden Chocolate Chip Muffins
(adapted from King Arthur Flour)
1/2 cup (8 tablespoons) butter
1 cup sugar (used a little less)
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 eggs
1/2 cup (4 ounces) milk (used low-fat milk)
2 cups (8 1/2 ounces) king Arthur white whole wheat flour or all-purpose flour (used all-purpose)
2 cups (12 ounces) chocolate chips (used about 1 1/2 cups)
coarse sparkling sugar, for topping

1. Preheat oven to 350°F. Lightly grease a 12 cup muffin pan or line with paper liners.

2. In a large mixing bowl beat the butter, sugar, baking powder, salt, vanilla, and cinnamon until fluffy. Beat in eggs, then stir in the milk. Mix in the flour, then the chocolate chips.

3. Divide the batter evenly among the muffin cups. Sprinkle with a little coarse sugar. Bake the muffins for 30 minutes, or until a cake tester inserted into the center of one comes out without crumbs clinging to it (a little chocolate is OK!).

Makes 12 delectable muffins.

The Pioneer Woman has been blogging about food photography - you should keep an eye open for what I suspect will be a photo challenge. You rock food pics - especially muffins and cupcakes.

OH! I used to live just down the road from King Arthur flour! My parents still live very near them.

VERY yummy looking muffins!

And you know what else about Nicki's comment? Food photography is NEVER as easy as it seems like it should be! I mean, you'd think that if your subject wasn't putting a hand up in front of his or her face or whining, "Are you DONE YET?!?!" and "What's TAKING YOU SO LONG?!?!?" that it wouldn't be that tough. But it's deceivingly difficult and your are always beautiful!
