Healthy Blueberry Muffins

Today is an awful day - We got some snow all night and this morning, and now it changed to icy rain. The commute back home will be awful!

Too bad I don't have any of these left...

Blueberry Muffins
from Good Housekeeping

1 cup(s) oats
1 1/2 cup(s) all-purpose flour
1/2 cup(s) packed brown sugar
2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
1 large egg
1 cup(s) low-fat buttermilk (used low-fat milk and lemon)
2 tablespoon(s) low-fat buttermilk
3 tablespoon(s) canola oil
1 teaspoon(s) vanilla extract
2 cup(s) blueberries (used frozen)
1 teaspoon(s) granulated sugar

1.Preheat oven to 400°F (350F). Spray 12-cup muffin pan with nonstick cooking spray.

2.Place oats in blender and blend until finely ground.

3.In large bowl, combine oats, flour, brown sugar, baking powder and soda, and salt. In small bowl, with fork, blend egg, buttermilk, oil, and vanilla; stir into flour mixture until flour is moistened. Fold in berries.

4.Spoon batter into muffin-pan cups; sprinkle with granulated sugar. Bake 23 to 25 minutes or until toothpick inserted in center of muffins comes out clean. Invert onto wire rack; serve warm, or cool to serve later.

I don't like blueberry's but I love that square pan!! I think it makes them look tastier..

It does sound like a dreary day, yuk!! But, yummm those muffins look good. And, now I want a square muffin pan!!!I bet it makes eating muffins easier because you have a corner to start on!! Where did you get it? Maybe I'll just have to hop on up there to buy one!!! haha!

I love the square pan. How much lemon to skim milk do you use in lieu of the buttermilk? I have some frozen blueberries and this looks very tasty.

Sorry about your nasty weather. Hang on, spring IS coming!! I like that square muffin pan, too....somehow they look more appealing square. By the way, aren't you glad you don't have to use those spiral stairs in the weather you're having?

The square pan is adorable. I've been coaxing my mom into eventually buying one so I can experience the joy that is square muffins. Not to mention those muffins looks spectacularly delicious!
