WW - Crock Pot Chicken Taco Chili

First off, thanks so much for your encouraging words!  You are the best!! I wasn't sure about posting my photos - but I am glad I did! You gave me the courage to continue on my quest to staying healthy!! xoxo

As I post often about my baking experiments, I decided to try to, at least once a week, do a WW or light recipe and post about it.  I hope you don't mind!!

One of my favorite sites for light WW recipes is skinnytaste.com - all kinds of delicious recipes and beautiful photos too!

Chicken Chili

Chicken Chili

For my first WW recipe post, decided to try out a crock-pot recipe.  I am not a big fan of crock pot recipes (I often find the chicken is a bit too cooked/dry to my taste!), but this chili was AMAZING!! We LOVED it!!! :)
Here's the link:  skinnytaste

Crock Pot Chicken Taco Chili
Servings: 10

1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce (used a 16 oz can)
10 oz package frozen corn kernels (used 2 small cans of corn kernels)
2 14.5-oz cans diced tomatoes w/chilies (used a 28 oz can of diced tomatoes)
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder (used a bit more as I didn't have any chilies in my tomatoes)
24 0z. (3) boneless skinless chicken breasts
chili peppers, chopped (optional)
chopped fresh cilantro

Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

I just happened to stumble upon this, and I am SO glad I did. I used a few skinless chicken thighs and it turned out great. The flavor was amazing. My boyfriend and I heated up the leftovers in the oven with sharp cheddar and used it as a dip. Thanks for posting such a fantastic recipe!

Hi, this recipe sounds delicious!
In NZ, 'tomato sauce' is ketchup. Should i use plain pasta sauce instead?

Reds said...

I would use plain pasta sauce for sure! Hope you enjoy!

I used frozen already cooked chicken strips and the recipe was extra easy! This is a great recipe!!

Anonymous said...

This may be a stupid question, but I still consider myself new to the crock pot cooking. Should I cook the chicken before I put it in the crock pot, or no? Right now I have frozen chicken breasts? Do I just put them in frozen or should I cook them first?
Thanks!

Reds said...

You don't need to cook the chicken before - just put it right in the crock pot! Not sure about the frozen chicken though - guess it would need to be cooked longer if it's frozen - never tried before! Hope you enjoy!

Found this via pinterest looks amazing. I may have to make this. RE:the questions on using frozen meat. don't because it will not be at a safe cooking temp or in other words it will be at an unsafe cooking temp for too long. That looks delicious, but it's LOADED with sodium :(

Anonymous said...

Does it matter what size crock pot you use? I have a pretty large one and wouldn't want it to dry out. What size was everyone else using?

Reds said...

Not sure if the size of the crockpot makes a difference - wouldn't think so though.

Laurie said...

What can I use as a gluten free substitution for the taco seasoning?

Kelly T said...

Can't wait to try. The size of crockpot is crucial to a slow cooked meal's success. They are meant to be 3/4-full, otherwise the food cooks too fast. Usually soups, ribs, roasts, etc are for the large 5-6 qt. standard dinner meals are usually best in 3-4qt cookers. I also find keeping the meat covered by the other ingredients prevents it from drying out. So, I will probably swap and put the chicken on the bottom. Might be a little bit more difficult to pull it out to shred, but I can't stand dry chicken and am not sure I want to risk it:) sounds yummy!

Made this tonight. Very good but pretty spicy for my family! Next time, I'm going to use tomatoes without the chilis and it should be better for my kids. Thanks for the recipe! :)

tommierayel said...

Do you think the beans should be drained and rinsed, or add the canned beans undrained?

Reds said...

tommierayel - I always drain my beans :)

Anonymous said...

Saw this on Pintrest, made it today in my 4 quart crockpot. It fit, but it was full. I used a small can of chili peppers, and only 1 packet of taco seasoning, no other spices. It was warm, but not too spicy. It was ready in 5 hours, I cooked it on HIGH. Everyone loves it. I made a crustless pumkin pie for desert. Thanks for the recipe!

Anonymous said...

I tried this recipe today and I am a HUGE fan of its simplicity and great taste! In about 12 minutes this morning, I just poured and stirred everything into the pot and left for work. I got home to some wonderfully warm smells and just in time to shred the chicken. So easy! Thanks for sharing!

Shelly said...

Holy cow, this sounds amazing! Any thoughts on a sub for beans? I really hate them but this recipe sounds so good..

Kit said...

Oh I wish the bit about draining and rinsing the beans was in the post instead of just the comments. This is almost overflowing out of my crockpot, and I left out the 8oz can of tomato sauce and chicken (I have cooked shredded chicken I'll add after). I didn't add as much corn as I would have liked. There would've been more room if I drain the beans. Hope it doesn't ruin it.

Anonymous said...

Great recipe, very filling! I just made this in a sauce pan on my stove in about 15 minutes (not good at planning ahead) with a shredded rotisserie chicken from the grocery store deli. Delicious and quick! Thank you for sharing!

Jon said...

That looks like a great recipe, similar to what we often cook. Throw in some chickpeas too, gotta have chickpeas!

Anonymous said...

I don't like beans - What would you use in place of the beans?

Anonymous said...

The pictures of the chili are beautiful and this recipe was very easy to follow. However,I thought it was kind of bland. I was left wanting something more. If I ever make this again, I will be sure to have some cheddar cheese and sour cream close by.

Anonymous said...

How many servings does this recipe make?

Anonymous said...

I make something really similar but just take 2 chicken breasts, 1 cup black beans, 1 cup corn, 1 can salsa, and a little cumin. Sometimes I sneak in a chopped zucchini for extra veggies. It's a favorite!

cathy said...

I am sorry but this was horrible. The pics are beautiful and I am new to the crock pot so maybe I did something wrong. IMO it would have been much better had I done it on the stove top in a pot like I do everything else. Everything seemed WAY overcooked. It was a waste of my $3.99/lb free range chicken as well as my time. Yuc.

Anonymous said...

Delicious! Those of you who are complaining about it being overcooked or bland are not following the recipe. I followed it exactly (I used 3 - 10 oz cans of Ro-tel). I couldn't believe how spicy it was! My boyfriend loves Spicy and he had about 4 bowls! It wasn't too spicy, it was perfect spicy :) Great recipe! Thank you!

Unknown said...

Found this recipe on Pintrest. I am so excited to try this! I saw that you drain and rinse the beans, but what about the corn? I am new to this whole cooking thing haha! Thank you!

Andrea said...

I found this on pinterest. Looks very good. I love tacos and chili. thanks for sharing.

Anonymous said...

Found this on pinterest. Came out delicious. Was a bit bland (even following recipe exactly). Added garlic, more chili peppers, and a bit more cumen and taco seasoning. Going to put this over quinoa but I'm sure rice would work to. Thanks for sharing!

Selena said...

For those of you complaining about the lack of spice/flavor, everyone's tastes are different! It's a lot easier for the people who like things spicy than to have too much. I personally like things really spicy, so I used diced tomatoes with jalapenos instead. And I will adjust the chili powder and maybe some other spices to taste once the chicken is cooked through if I feel it's lacking something. It's in the crockpot right now, and based on the ingredients, I am sure I will love it! Recipe spices are meant to be tweaked. I just like having a foundation for something healthy that sounds wonderful. I'm looking forward to dinner tonight. Thanks for sharing!

My husband won a chili cook-off last night with this recipe--Judge's Favorite! He replaced the cumin with 1 1/2 tsp of crushed red pepper and also add about a cup of water. He recently broke his ankle, but still wanted to participate in the contest, so I went looking for crock pot "throw it all in" recipes. Thanks for the this!

Thank you!!! My family and I LOVE this recipe! Since I found it on pinterest I have made it about 5 times now. Its so easy to just throw everything in the crock pot and it comes out perfect everytime. I have some in the crock pot right now for dinner tonight ;)

Anonymous said...

I only have beans in a bag. Do I need to boil them first?

Anonymous said...

This is really delicious and has become a favorite in my house. We crush fritos over the top and I also provide sour cream and shredded cheddar for those that want to add it. I use boneless skinless thighs. Probably not a low cal dish after I'm done with it though....

Reds said...

Dear anonymous: you do have to cook the beans if you buy them in a bag. You have to let them soak in water for many hours, rinse them and then cook then for about 1 15 minutes.

Anonymous said...

Does the chicken have to be thawed? I love being able to "forget" to thaw my chicken and throw it in the crockpot.

I just made this today...it was delicious. I didn't drain my beans because I didn't see that in the comments until after I started, but it turned out great. I understand the blandness and I think it's because the lack of added salt...obviously you have to keep in mind that it's a WW recipe. I added some sea salt to curb the blandness and it was perfect.

this is going to be great! making it for a gamenite tomorrow! I will probably use fully cooked chicken strips instead and top with oyster crackers and cheese! hope they enjoy it!

This was very yummy but too spicy for my family as is. To doctor...I used half the amount of chili powder. I added two tablespoons of peanut butter. After I shredded the chicken I removed half of the chili from the crock pot. I then added a can of Cambell's tomato soup to what was left in the crock pot . It was a huge hit and I will definitely make it again.

Smells great! I used onion soup mix instead of onion, since I use that in my usual chili (Mr. Food Bread Bowl Chili). Have left out cumin and chili powder for now, usually put those in at the end, and I want to check salt content once chicken is fully cooked. Left out the corn and the diced tomatoes, and subbed in crushed tomatoes. I'm sure it will be great! Thanks!

Anonymous said...

This recipe sounds awesome and the calories per serving are great, do you by chance know the carbs per serving, have to count those.

Anonymous said...

Made this for friends and it was AWESOME!! Swapped the chicken breasts for chicken legs, (seasoned, boiled, and removed fat and bones). Also didn't do it in the crock pot, but it turned out so good!! Topped it with sour cream, lettuce, cheese and salsa. The entire pot was DEMOLISHED. Excellent recipe.

heather said...

Do you add the diced tomatos right away? Also, do you drain them?

Reds said...

Yes, I added the tomatoes right away and did not drain them! Hope you enjoy this recipe! :)

Anonymous said...

I'm going to try this! I understand about "too dry" crock-pot chicken. I've found a less expensive and moister solution to that problem: use boneless, skinless, chicken thighs. I don't even like dark-meat chicken, but in the crock-pot it works!

Mrs. Wilson said...

This is a really great recipe. I saw this on Pinterest yesterday and made it last night. I already had cooked chicken in my freezer, though, so I defrosted it and added all ingredients to a 6-qt pot. I brought it to a low boil, then let it simmer for about an hour. We served it with cheese on the top and tortilla chips. This one is worthy of making a recipe card! Thanks.

Valdez said...

This was honestly one of the best things I have EVER cooked! :) I found this post on Pinterest as well, but added my own kind of personality to it and my husband told me it was the BEST thing I had ever cooked. I also cooked it on my stove-top, as I do not have a slow cooker, and it turned out to be just as good, I'm sure. :) Highly recommended.

Anonymous said...

Found this on Pinterest, awesome! Made is yesterday, was a little wetter than your picture, but soooooo yummy! Grilled some Hatch chilis the night before last, sweated them out, peeled and chopped then put into the Chicken Chili. I think next time I'll try using hominy rather than corn. Soooooo good! Thanks!

Unknown said...

THIS. IS. AMAZING. It was absolutely delicious, and everyone that has tried it since has agreed. I didn't do the cilantro or chilies, and I used regular diced tomatoes instead of ones with chilies, and I threw in an extra can of tomato sauce.....it was amazing. Thanks for this awesome recipe! I might actually start cooking this instead of my regular fat fat fatty chili, and THAT is saying something!!!!

In the crockpot now. I didn't have plain tomato sauce so I used vodka sauce (crossing my fingers) & I added beer, seemed like it needed more liquid to me. I'll let you know how it turns out. :)

pinterest addict said...

I made this today. I didn't have plain tomato sauce so I used vodka sauce and i used more chicken so i thought it need more of a liquid base so I added a beer.also, I used stewed tomatos with onion. Turned out very good. The chicken was a tad dry. I cooked from frozen @10:00 -3:00 on high, then on low until about 5:00. Next time I'll cook it on low the whole time. The whole family loved it though. We also do not like kidney beans so I doubled up on the black beans. If you like really spicy food you would want to add more of your spices. It's just got a pinch of a kick which was perfect for me and my family. I will make this again! Fast, cheap, easy! And leftovers for another meal!

I made this last night! It was very yummy and the hubby loved it! I am taking a course on Thursday evenings, so this was a perfect thing to throw in the crockpot, forget about, and eat like a queen later! Thanks for sharing!

I feel the same way about chicken in the crock pot so I put my meat thermometer in the biggest chicken breast and only cook until it gets to 165 degrees. My thermometer beeps when it is at temp so I just turn off the crock pot then. I feel it still gets the slow cook flavor but doesn't dry out.
Hope you try and it works for you too!
