WW - Crock Pot Chicken Taco Chili

First off, thanks so much for your encouraging words!  You are the best!! I wasn't sure about posting my photos - but I am glad I did! You gave me the courage to continue on my quest to staying healthy!! xoxo

As I post often about my baking experiments, I decided to try to, at least once a week, do a WW or light recipe and post about it.  I hope you don't mind!!

One of my favorite sites for light WW recipes is skinnytaste.com - all kinds of delicious recipes and beautiful photos too!

For my first WW recipe post, decided to try out a crock-pot recipe.  I am not a big fan of crock pot recipes (I often find the chicken is a bit too cooked/dry to my taste!), but this chili was AMAZING!! We LOVED it!!! :)

Crock Pot Chicken Taco Chili
Servings: 10

1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce (used a 16 oz can)
10 oz package frozen corn kernels (used 2 small cans of corn kernels)
2 14.5-oz cans diced tomatoes w/chilies (used a 28 oz can of diced tomatoes)
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder (used a bit more as I didn't have any chilies in my tomatoes)
24 0z. (3) boneless skinless chicken breasts
chili peppers, chopped (optional)
chopped fresh cilantro
 
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

I just happened to stumble upon this, and I am SO glad I did. I used a few skinless chicken thighs and it turned out great. The flavor was amazing. My boyfriend and I heated up the leftovers in the oven with sharp cheddar and used it as a dip. Thanks for posting such a fantastic recipe!

Hi, this recipe sounds delicious!
In NZ, 'tomato sauce' is ketchup. Should i use plain pasta sauce instead?

This may be a stupid question, but I still consider myself new to the crock pot cooking. Should I cook the chicken before I put it in the crock pot, or no? Right now I have frozen chicken breasts? Do I just put them in frozen or should I cook them first?

You don't need to cook the chicken before - just put it right in the crock pot! Not sure about the frozen chicken though - guess it would need to be cooked longer if it's frozen - never tried before! Hope you enjoy!

Found this via pinterest looks amazing. I may have to make this. RE:the questions on using frozen meat. don't because it will not be at a safe cooking temp or in other words it will be at an unsafe cooking temp for too long. Does it matter what size crock pot you use? I have a pretty large one and wouldn't want it to dry out. What size was everyone else using?

Can't wait to try. The size of crockpot is crucial to a slow cooked meal's success. They are meant to be 3/4-full, otherwise the food cooks too fast. Usually soups, ribs, roasts, etc are for the large 5-6 qt. standard dinner meals are usually best in 3-4qt cookers. I also find keeping the meat covered by the other ingredients prevents it from drying out. So, I will probably swap and put the chicken on the bottom. Might be a little bit more difficult to pull it out to shred, but I can't stand dry chicken and am not sure I want to risk it:) sounds yummy!

Saw this on Pintrest, made it today in my 4 quart crockpot. It fit, but it was full. I used a small can of chili peppers, and only 1 packet of taco seasoning, no other spices. It was warm, but not too spicy. It was ready in 5 hours, I cooked it on HIGH. Everyone loves it. I made a crustless pumkin pie for desert. Thanks for the recipe!

I tried this recipe today and I am a HUGE fan of its simplicity and great taste! In about 12 minutes this morning, I just poured and stirred everything into the pot and left for work. I got home to some wonderfully warm smells and just in time to shred the chicken. So easy! Thanks for sharing!

Oh I wish the bit about draining and rinsing the beans was in the post instead of just the comments. This is almost overflowing out of my crockpot, and I left out the 8oz can of tomato sauce and chicken (I have cooked shredded chicken I'll add after). I didn't add as much corn as I would have liked. There would've been more room if I drain the beans. Hope it doesn't ruin it.

Great recipe, very filling! I just made this in a sauce pan on my stove in about 15 minutes (not good at planning ahead) with a shredded rotisserie chicken from the grocery store deli. Delicious and quick! Thank you for sharing!

The pictures of the chili are beautiful and this recipe was very easy to follow. However,I thought it was kind of bland. I was left wanting something more. If I ever make this again, I will be sure to have some cheddar cheese and sour cream close by.

I make something really similar but just take 2 chicken breasts, 1 cup black beans, 1 cup corn, 1 can salsa, and a little cumin. Sometimes I sneak in a chopped zucchini for extra veggies. It's a favorite!

I am sorry but this was horrible. The pics are beautiful and I am new to the crock pot so maybe I did something wrong. IMO it would have been much better had I done it on the stove top in a pot like I do everything else. Everything seemed WAY overcooked. It was a waste of my $3.99/lb free range chicken as well as my time. Yuc.

Delicious! Those of you who are complaining about it being overcooked or bland are not following the recipe. I followed it exactly (I used 3 - 10 oz cans of Ro-tel). I couldn't believe how spicy it was! My boyfriend loves Spicy and he had about 4 bowls! It wasn't too spicy, it was perfect spicy :) Great recipe! Thank you!

Found this on pinterest. Came out delicious. Was a bit bland (even following recipe exactly). Added garlic, more chili peppers, and a bit more cumen and taco seasoning. Going to put this over quinoa but I'm sure rice would work to. Thanks for sharing!

For those of you complaining about the lack of spice/flavor, everyone's tastes are different! It's a lot easier for the people who like things spicy than to have too much. I personally like things really spicy, so I used diced tomatoes with jalapenos instead. And I will adjust the chili powder and maybe some other spices to taste once the chicken is cooked through if I feel it's lacking something. It's in the crockpot right now, and based on the ingredients, I am sure I will love it! Recipe spices are meant to be tweaked. I just like having a foundation for something healthy that sounds wonderful. I'm looking forward to dinner tonight. Thanks for sharing!

Made this twice in 2 weeks after finding on pinterest, it is so yummy! I would like to point out though that when I plugged this into the weight watchers recipe builder it was 7 points plus points per cup. Still not bad though for as easy and delicious it is!

I didn't drain the beans, used frozen corn, & it was still delish! We sprinkled oyster crackers & shredded cheese on top. So pretty! My picky 8 year old who only likes spicy LOVED it & wanted it for breakfast!

My husband won a chili cook-off last night with this recipe--Judge's Favorite! He replaced the cumin with 1 1/2 tsp of crushed red pepper and also add about a cup of water. He recently broke his ankle, but still wanted to participate in the contest, so I went looking for crock pot "throw it all in" recipes. Thanks for the this!

This is really delicious and has become a favorite in my house. We crush fritos over the top and I also provide sour cream and shredded cheddar for those that want to add it. I use boneless skinless thighs. Probably not a low cal dish after I'm done with it though....

Dear anonymous: you do have to cook the beans if you buy them in a bag. You have to let them soak in water for many hours, rinse them and then cook then for about 1 15 minutes.

I just made this today...it was delicious. I didn't drain my beans because I didn't see that in the comments until after I started, but it turned out great. I understand the blandness and I think it's because the lack of added salt...obviously you have to keep in mind that it's a WW recipe. I added some sea salt to curb the blandness and it was perfect.
