Cookies & Cream Cupcakes

Who doesn't love Oreos??!! Especially in a cupcake!! Went to my sister-in-law to learn how to make sushi (what a fun night that was!) and of course had to bring dessert!

Went looking in my many recipe books and tried the Cookies & Cream Cupcakes from "100 Best Cupcake Recipes".  Delicious!!

Cookies & Cream Cupcakes (my changes in red)

2 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 2/3 cups sugar (used 1 1/3 cups)
1 cup milk (used low fat)
1/2 cup butter, softened
2 teaspoons vanilla
3 egg whites
1 cup crushed chocolate sandwich cookies (about 10 cookies) plus additional for garnish (used mini oreos)
Frosting

1. Preheat oven to 350F. Lightly grease 24 standard muffins cups or line with paper baking cups.

2. Sift flour, baking powder and salt into large bowl; stir in sugar.  Add milk, butter and vanilla; beat with eletric mixer at low speed 30 seconds. Beat at medium speed 2 minutes. Add egg whites, beat 2 minutes. Stir in 1 cup crushed cookies. Spoon batter into prepared muffins cups, fillling two-thirds full.

3. Frost cupcakes; garnish with additional crushed cookies.

I made 16 big cupcakes instead of 24 small ones!!

Cookies & Cream Cupcakes

Celebration Chocolate Frosting

1 cup powdered sugar
3 tablespoon cocoa
3 tablespoons butter or margarine, softened
2 tablespoon water or milk
1/2 teaspoon vanilla extract

Stir together powdered sugar and cocoa. Beat butter and 1/2 cup cocoa mixture in medium bowl until blended. Add remaining cocoa mixture, water and vanilla, beat to spreading consistency.
