PW's Awesome-est Blueberry Muffins

Taking a break from posting New York photos to tell you about these amazing blueberry muffins!! IMG_5927_edited-1 This is the first recipe I have ever made from Pioneer Woman's website - and they are good!! IMG_5932_edited-1
She makes a sauce to go with the muffins - but I ate them as is - yummy! IMG_5930_edited-1 Pioneer's Woman Awesome-est Blueberry Muffins

3 cups minus 2 tablespoons flour
1 teaspoon baking soda
2 teaspoons baking powder
Heavy pinch of salt
Dash of Nutmeg
1 cup sugar (used a little less)
1/2 cup vegetable oil (used canola oil)
1 egg
1 generous cup plain, unflavored yogurt (throw in extra if you want) (used blueberry yogurt)
2 cups fresh blueberries
Vanilla Extract
Softened Butter, for muffin tins
Turbinado sugar (optional)

Preheat oven to 385 degrees.

In a large bowl sift flour, baking soda, nutmeg, baking powder, and salt. Set aside.

In another large bowl whisk together sugar, oil, cap-ful of vanilla, egg, and yogurt. Add the dry ingredients and stir to a count of 10.

Add blueberries, reserving 1/2 cup, to mixture and stir 3 times.

Add mixture to well-buttered muffin pans. Sprinkle remaining berries on top and press down lightly.
 Sprinkle turbinado sugar over top. (Brown sugar can be used instead.)

Bake 20 to 25 minutes and allow to cool completely.

I tried a recipe (can't even remember what it was) and it didn't turn out so well - but her stuff looks very tasty (so I think it was that one particular recipe).

These look great and the blueberries very plump.

Oh, yum! I read through the recipe and it sounds delicious! I just made a Lemon Blueberry bread that I'll be posting soon, and it was good, but I'm tempted to try it again with a dash of nutmeg. Blueberries are definitely one of the joys of spring and summer!

I love the PW, and I'm so very excited that she now has her own cooking show on Saturday mornings! :) I'll have to try these with the leftover blueberries we have in our freezer from last fall. YUM!
