I had bought a few KitKat chocolate bars to decorate a cake for Easter but finally didn't use them. I decided to make some chocolate muffins and instead of adding some dark chocolate, I crumbled some KitKat bars!
They were good :)
Chocolate Muffins with KitKat
adapted from 125 Best Chocolate Recipes
makes 12 small muffins (I made 9!)
1 1/2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 tbsp baking powder
1/4 tsp salt
3/4 cup packed light brown sugar (the recipe called for 1 cup - but I like my muffins not too sweet!)
1/2 cup low-fat milk
1/2 cup brewed coffee, cooled
1/3 cup vegetable oil
1 tsp vanilla
2 KitKat chocolate bars (chopped)
Preheat oven to 375F and grease of paper line 12-cup muffin pan.
In a small bowl, mix together flour, cocoa powder, baking powder and salt.
In a large bowl, mix together brown sugar, eggs, milk, coffee, oil and vanilla. Mix the dry ingredients just until combined. Fold in chopped chocolate (I kept some crumbs and added them at the end on top of the muffins). Scoop batter into prepared muffin cups.
Bake in preheated oven for 18 to 20 minutes or until a tester inserted into center comes out clean. Let muffins cool in pan on a wire rack for 5 minutes. Transfer to rack and let cool completely.
