Chocolate Chip Muffins

We have been having amazing weather the last few days! I usually dislike the month of March because the weather is so crappy. Not these last few days though!

Chocolate Chip Muffins
adapted from Recipes to Share Bakesale
Makes 12 muffins

1 3/4 cups all-purpose flour
1/3 cup packed brown sugar
2 tablespoons unsweetened cocoa powder
2 1/2 teaspoons baking powder
1 1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup low-fat milk
1 egg, lightly beaten
1/4 cup unsweetened applesauce
2 tablespoons butter, melted
1 teaspoon vanilla
2/3 cup mini semisweet chocolate chips

1. Preheat oven to 350F. Line 12 standard muffin cups with foil baking cups.

2. Combine flour, brown sugar, cocoa, baking powder, cinnamon and salt in medium bowl. Stir together milk, egg, applesauce, butter and vanilla in small bowl until blended. Add to flour mixture; stir just until blended. Fold in chocolate chips. Spoon batter evenly into prepared muffin cups.

3. Bake 20-25 minutes or until toothpick inserted into centers comes out clean. Cool in pan 5 minutes. Remove to wire rack; cool completely. IMG_4572_edited-1
