Chocolate Muffins

Was in the mood for chocolate muffins.

I should say here I am ALWAYS in the mood for chocolate muffins!

These were good - but next time I would add some chocolate chips to the mix :)

Chocolate Muffins
from 1500 Best Bars, Cookies, Muffins, Cakes & More
Makes 12 muffins

1 2/3 cups all-purpose flour
3/4 cup granulated sugar (used a little less)
1/3 cup unsweetened cocoa powder
3 1/2 tsp baking powder
1/2 tsp salt
1 egg
1 cup milk (used low-fat milk)
1/4 cup vegetable oil or shortening, melted (used Canola oil)

1. Preheat oven to 400F (350F). Grease or paper-line muffin tin.

2. In a large bowl, combine flour, sugar, cocoa, baking powder and salt.

3. In another bowl, beat together egg, milk and oil. Pour into the flour mixture and stir just until combined. Do not overmix.

4. Spoon batter into prepared muffin tin. Bake in preheated oven for 20 to 25 minutes.

Hi there! I just found your blog and started following you :) I just had to tell you that these muffins sound amazing! One tip I've learned is to dissolve some instant coffee in one of your liquid ingredients and the coffee really pumps up the chocolate flavor. I'm not sure how it works but I put instant coffee in my brownies and they are the best I've ever had!

They look so good! I am definitely going to make these...and add chocolate chips. its just not real chocolate muffins without chunks of chocolate!
