My mom used to bake some refrigerator cookies. They weren't my favorite cookies as there were no chocolate chips in them - only raisins!
I loved to see her prepare those cookies - see her shape the dough into logs.
I still have her recipe - should try it next time... when I am not in the mood for chocolate!!
My logs weren't totally round so my cookies are a bit crooked... but they were still yummy!!
Chocolate Chip Refrigerator Cookies

Maes about 8 dozen cookies
2 3/4 cups all-purpose flour
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar (used a little less)
2 eggs
1 tsp vanilla
1 cup semisweet chocolate chips
1/2 cup finely chopped pecans (didn't use)
1. On a sheet of waxed paper or in a bowl, combine flour, baking soda, baking powder and salt. Set aside.
2. In a large bowl, using an electric mixer on medium speed, beat butter and brown and granulated sugars until light and creamy, about 3 minutes. Add eggs, one at a time, beating well after each addition. Add vanilla. On low speed, gradually add flour mixture, beating until blended. With a wooden spoon, stir in chocolate chips and pecans. Divide dough into halves. Shape each into a roll 12 inches long. Wrap and chill until firm, at least 4 hours.
3. 15 minutes before you are ready to bake, preheat oven to 350F. Cut rolls into 1/4 inch slices. Place about 2 inches apart on cookie sheet. Bake in preheated oven for 8 to 12 minutes or until light or golden. Cool for 5 minutes on sheet, then transfer to a rack and cool completely.
