Lemon Muffins

What a beautiful weekend! Sun and warm enough weather that I got to wear sandals!! Yeah!!

To celebrate the sun, why not bake some lemon muffins?!! :)

I love anything with lemon - and I always add much more than the recipes call for!

Lemon Muffins

2 cups all-purpose flour
1/2 cup white sugar (used a little less)
3 teaspoons baking powder
1 tablespoon grated lemon zest (used lemon zest of 2 lemons)
Added some lemon juice from one lemon
1/2 teaspoon salt
3/4 cup milk (used low fat)
1/3 cup vegetable oil (used Canola)
1 egg
Heat oven to 400 degrees F (350F in my oven). Grease bottoms only of 12 muffin cups or line with baking cups.

In a medium bowl, combine flour, sugar, baking powder, lemon zest and salt; mix well. In a small bowl, combine milk, oil and egg (added the lemon juice here); blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)               

Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

I love that first day of spring when I get to wear sandals and shed the socks! What a fantastic feeling! And these muffins sound perfect. Lemon is such a great summer flavor . . . and those little smiley faces are so cute!
