Peanut Butter Chocolate Mini Muffins

Made these little gems a couple of weeks ago.  Just love the mix of peanut butter and chocolate.  As I had some chocolate kisses - used those instead of chocolate chips!

Peanut Butter Chocolate Mini Muffins

1 cup whole spelt flour (used whole wheat flour)
1/3 cup tagatose sweetener (used brown sugar)
1/2 teaspoons baking powder
1 egg
1/3 cup milk (used low fat)
1/4 cup butter
1 teaspoons vanilla extract
1/3 cup peanut butter
1/3 cup chocolate drops (used one kiss)

Method

Preheat the oven to 180°degrees. In a small bowl, combine the peanut butter and butter and melt in a microwave or small pan. In another bowl, mix flour, tagatose (or sugar) and baking powder. Add egg, vanilla extract and the peanut butter mixture along with milk. Add chocolate drops. Mix well and spoon the mixture in the mini muffin cups. Bake for 12-15min until all mini muffins are puffed up.

Makes about 12 mini muffins

Okay....YUM! I LOVE peanut butter and chocolate together. Perfect combination. And when you call them muffins you can pretend they're kind of good for you. :)
