Peanut Butter Chocolate Chews

What a beautiful sunny day!! Love Fall days like today - a bit cool, but not too cold, and a beautiful sunshine!

Had a great weekend. Celebrated my nephew's 10th birthday yesterday (happy birthday Will!) - and, of course, had to bake for the occasion (will post about these delicious cupcakes sometimes this week)!!

Today, went for a nice drive and went to see my cousin for a short visit.  Her boyfriend was real happy when he saw me arrive with some muffins and cupcakes!! :)

Today's post is a real easy recipe.

They are so quick to prepare - and real tasty too!


Peanut Butter Chocolate Chews (from Rice Krispies)

1/4 cup packed brown sugar

1/4 cup golden corn syrup (used Maple syrup)
1/4 cup crunchy peanut butter (used smooth)
1 1/2 cups RICE KRISPIES* Vanilla Flavour cereal, finely crushed to 3/4 cup (used regular RK and added some vanilla)
3/4 cup semi-sweet or milk chocolate chips

1.Combine sugar, corn syrup and peanut butter in large saucepan. Heat over medium heat, about 1 minute, stirring to dissolve sugar. (used the microwave for this)

2.Remove from heat; immediately stir in crushed cereal. Press into 20 cm (8-inch) square baking pan lined on bottom and two sides with foil. Alternately, press about 10 mL (2 tsp) mixture into small candy papers in 4.5 cm (1 3/4-inch) diameter mini muffin/tart pan.

3.Melt chocolate in medium bowl in microwave or over saucepan of boiling water. Stir until smooth. Spread over mixture in pan, or spoon 5 mL (1 tsp) over top in each cup.

4.Let cool to set chocolate. Lift out of pan, remove foil and cut into small bars. Store in covered container up to one week.

OH I am going to have to try those. Rice crispy treats are my fav and I Love chocolate and peanut butter.

This is just what I was looking for. I need to make an easy to handle bite sized dessert for a chinese auction for my daughters cheer team.

If I made the recipe and only used the candy sized paper cups, about how many would that make?

Hi mysterysinc - this recipe made 24 mini treats. If you make them candy size - I guess it would be around 30-35?? You will love them!
