Mini Baked Donuts

I bought a donut pan a couple of weeks ago and I couldn't wait to try baked donuts!!  I first wanted to try mini donuts after seeing how cute they were on this blog!! I used her recipe as is!

Should have piped the mix in the pan but just used a spoon instead - there isn't much of a hole... ;)

Baked Donuts (recipe from Sur La Table)

2 cups cake flour, sifted
¾ cup granulated sugar
2 tsp. baking powder
¼ tsp. ground nutmeg
1 tsp. salt
¾ cup buttermilk (used low-fat milk with a bit of lemon)
2 eggs, lightly beaten
2 tbsp. butter, melted

1. Preheat oven to 425°F. Spray donut pan with nonstick cooking spray.

2. In large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs and butter and beat until just combined. Fill each donut cup approximately 2/3 full.

3. Bake 7–8 minutes or until the top of the donuts spring back when touched (this is the timing for mini donuts. Not sure what the time is for full size ones). Let cool in pan for 4–5 minutes before removing. Finish donuts with chocolate ganache or vanilla glaze.

Vanilla Glaze


•1 cup confectioner’ s sugar
•1 1/2 tbsp. milk (low fat milk)
•½ tsp. vanilla extract

1. In small bowl, stir together sugar, milk and vanilla extract until sugar is completely dissolved. If mixture is too thick, add a little more milk. If too thin, add more sugar. You can add a couple of drops of food coloring for different colored glazes (I used red and yellow). Dip top of donuts in glaze and let the glaze set and dry before serving.

no hole - the better to hold the icing. YUMMMMMMM those lemon ones are scrumptious looking.

Wow! These are really cute! They look like they would make nice little gifts as well. I never heard of baked donuts, and they look like they might be the consistency of cupcakes. Are they? I'm going to check out your link now. . . . TFS, you enabler, you!

Very cute! Sometimes mine get a little too filled, but I just pop the place where the hole is since it's such a thin layer.
