The second dessert I brought for my dad's birthday, was strawberry-jam-filled-cupcakes - was in the mood for strawberries!!!
I had some leftover icing from the Lemonade Cupcakes I had just made - so decided to use the leftover for these jam-filled cupcakes!! I also had some tangy slices of candy that I added on top and some cute little umbrellas I added for fun!!
Here's the recipe!
Strawberry Jam Filled Cupcakes (my changes in red)
1/2 cup sugar
1/2 cup shortening (used butter)
2 eggs, beaten
2 cups sifted cake flour
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
1/2 cup sour milk
1 cup strawberry jam
Your favorite frosting (used my Lemonade Icing)
Preheat oven to 375 (350).
Grease 20 muffin (made 14 big cupcakes) tin cups.
In a large bowl,cream sugar and shortening,until fluffy.
Add in the eggs,blending well.
Next add sifted flour and spices,salt& baking soda.
Add alternately with milk to creamed mixture.
Fold in the strawberry jam,combine.
Bake for 20-25 minutes.
After removing from pan,you may frost with your favorite frosting!
