Healthy Granola

My dbf Ben loves granola - he has a bowl every day.  And as I love baking, I discovered I loved making healthy granola too!!  I did make this before the heat wave we are having this week - no way am I baking anything in this heat!!  Can't wait for the weather to cool down so I can bake again!! :)

When I saw this recipe - breakfast-granola.html - I knew it would be a hit with Ben ... and it was!!

Here's the recipe:

Granola (my changes in red)

3 cups rolled oats (old-fashioned oats)
1 cup chopped walnuts (didn't add this as I didn't have at the time)
1 cup sunflower seeds (used unsalted seeds)
3/4 cup shredded sweet coconut
1/4 cup light brown sugar (added about half of this - we don't like too sweet granola!)
1/4 cup honey (used maple syrup)
2 tablespoons canola oil
3/4 teaspoon salt
dried fruit, optional (used dried cranberries)
1/4 teaspoon cinnamon, optional

Preheat oven to 300 degrees F.

In a large bowl, combine the dry ingredients.

In another bowl, combine honey, oil, and salt. Drizzle the honey mixture into the bowl with the oats and mix it all together. Pour onto a large, rimmed sheet pan. Bake for about 30-35 minutes, stirring every 10 or 15 minutes. It should be golden brown. Be careful not to burn it.

Remove from oven and cool completely. Add raisins or dried fruit, if you like, and mix until combined. Let cool. Store in an airtight container.

This is a very filling cereal - perfect to eat after a good workout!!

This looks great! I've been experimenting with granola a lot lately. My favorite addition so far is sliced natural almonds with maple syrup as the sweetener. I've also tried rice syrup and honey. I'm looking forward to giving this one a spin. Thanks!

I just made this using almonds, maple syrup and nutmeg. It's great, I'm snacking on it now! I love how much less oil this has than some other recipes. -Heather

This is a really good recipe! I've made about three other versions and they all involved more oil and didn't taste as good as this. Great baking directions, too - I've burned a few batches before but this was the perfect temperature.
