As I post often about my baking experiments, I decided to try to, at least once a week, do a WW or light recipe and post about it. I hope you don't mind!!
One of my favorite sites for light WW recipes is skinnytaste.com - all kinds of delicious recipes and beautiful photos too!
For my first WW recipe post, decided to try out a crock-pot recipe. I am not a big fan of crock pot recipes (I often find the chicken is a bit too cooked/dry to my taste!), but this chili was AMAZING!! We LOVED it!!! :)

Crock Pot Chicken Taco Chili
Servings: 10
1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce (used a 16 oz can)
10 oz package frozen corn kernels (used 2 small cans of corn kernels)
2 14.5-oz cans diced tomatoes w/chilies (used a 28 oz can of diced tomatoes)
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder (used a bit more as I didn't have any chilies in my tomatoes)
24 0z. (3) boneless skinless chicken breasts
chili peppers, chopped (optional)
chopped fresh cilantro
Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).

I just happened to stumble upon this, and I am SO glad I did. I used a few skinless chicken thighs and it turned out great. The flavor was amazing. My boyfriend and I heated up the leftovers in the oven with sharp cheddar and used it as a dip. Thanks for posting such a fantastic recipe!

You don't need to cook the chicken before - just put it right in the crock pot! Not sure about the frozen chicken though - guess it would need to be cooked longer if it's frozen - never tried before! Hope you enjoy!

ReplyDeleteCan't wait to try. The size of crockpot is crucial to a slow cooked meal's success. They are meant to be 3/4-full, otherwise the food cooks too fast. Usually soups, ribs, roasts, etc are for the large 5-6 qt. standard dinner meals are usually best in 3-4qt cookers. I also find keeping the meat covered by the other ingredients prevents it from drying out. So, I will probably swap and put the chicken on the bottom. Might be a little bit more difficult to pull it out to shred, but I can't stand dry chicken and am not sure I want to risk it:) sounds yummy!

It was warm, but not too spicy. It was ready in 5 hours, I cooked it on HIGH. Everyone loves it. I made a crustless pumkin pie for desert. Thanks for the recipe!

ReplyDeleteOh I wish the bit about draining and rinsing the beans was in the post instead of just the comments. This is almost overflowing out of my crockpot, and I left out the 8oz can of tomato sauce and chicken (I have cooked shredded chicken I'll add after). I didn't add as much corn as I would have liked. There would've been more room if I drain the beans. Hope it doesn't ruin it.

ReplyDeleteI make something really similar but just take 2 chicken breasts, 1 cup black beans, 1 cup corn, 1 can salsa, and a little cumin. Sometimes I sneak in a chopped zucchini for extra veggies. It's a favorite!

IMO it would have been much better had I done it on the stove top in a pot like I do everything else. Everything seemed WAY overcooked. It was a waste of my $3.99/lb free range chicken as well as my time. Yuc.

ReplyDeleteFor those of you complaining about the lack of spice/flavor, everyone's tastes are different! It's a lot easier for the people who like things spicy than to have too much. I personally like things really spicy, so I used diced tomatoes with jalapenos instead. And I will adjust the chili powder and maybe some other spices to taste once the chicken is cooked through if I feel it's lacking something. It's in the crockpot right now, and based on the ingredients, I am sure I will love it! Recipe spices are meant to be tweaked. I just like having a foundation for something healthy that sounds wonderful. I'm looking forward to dinner tonight. Thanks for sharing!

ReplyDeleteDear anonymous: you do have to cook the beans if you buy them in a bag. You have to let them soak in water for many hours, rinse them and then cook then for about 1 15 minutes.

I just made this today...it was delicious. I didn't drain my beans because I didn't see that in the comments until after I started, but it turned out great. I understand the blandness and I think it's because the lack of added salt...obviously you have to keep in mind that it's a WW recipe. I added some sea salt to curb the blandness and it was perfect.

ReplyDeleteThis was very yummy but too spicy for my family as is. To doctor...I used half the amount of chili powder. I added two tablespoons of peanut butter. After I shredded the chicken I removed half of the chili from the crock pot. I then added a can of Cambell's tomato soup to what was left in the crock pot . It was a huge hit and I will definitely make it again.

ReplyDeleteSmells great! I used onion soup mix instead of onion, since I use that in my usual chili (Mr. Food Bread Bowl Chili). Have left out cumin and chili powder for now, usually put those in at the end, and I want to check salt content once chicken is fully cooked. Left out the corn and the diced tomatoes, and subbed in crushed tomatoes. I'm sure it will be great! Thanks!

ReplyDeleteMade this for friends and it was AWESOME!! Swapped the chicken breasts for chicken legs, (seasoned, boiled, and removed fat and bones). Also didn't do it in the crock pot, but it turned out so good!! Topped it with sour cream, lettuce, cheese and salsa. The entire pot was DEMOLISHED. Excellent recipe.

ReplyDeleteI'm going to try this! I understand about "too dry" crock-pot chicken. I've found a less expensive and moister solution to that problem: use boneless, skinless, chicken thighs. I don't even like dark-meat chicken, but in the crock-pot it works!

I already had cooked chicken in my freezer, though, so I defrosted it and added all ingredients to a 6-qt pot. I brought it to a low boil, then let it simmer for about an hour. We served it with cheese on the top and tortilla chips. This one is worthy of making a recipe card! Thanks.

I also cooked it on my stove-top, as I do not have a slow cooker, and it turned out to be just as good, I'm sure. :) Highly recommended.

ReplyDeleteThis was an awesome dish! I love using my slow cooker and this was sure an easy one! I used 1 and half packs of chili seasoning in replace of the chili powder. We also served ours on soft taco's with lettuce, sour cream and lime! Yummy! Thanks for sharing the recipe! :)

I didn't have plain tomato sauce so I used vodka sauce and i used more chicken so i thought it need more of a liquid base so I added a beer.also, I used stewed tomatos with onion. Turned out very good. The chicken was a tad dry. I cooked from frozen @10:00 -3:00 on high, then on low until about 5:00. Next time I'll cook it on low the whole time. The whole family loved it though. We also do not like kidney beans so I doubled up on the black beans. If you like really spicy food you would want to add more of your spices. It's just got a pinch of a kick which was perfect for me and my family. I will make this again! Fast, cheap, easy! And leftovers for another meal!
ReplyDeleteMade this for dinner tonight. I followed the recipe exactly although I did not rinse the beans. My husband LOVED it!! Used two cans of rotel and did not think it was too spicy at all! Will definitely be making this again very soon!
ReplyDeleteThis was great - nice and spicy. I made the mistake of using a whole package of Trader Joe's taco seasoning, and the sodium was through the roof! Next time I will make low-sodium adjustments, but hubby loved it!
ReplyDeleteI made this on Saturday and loved it! I gave some to my daughter and she loved it so much that she took a bowl home. I even froze some so I can have a bowl on a real cold night when i'm too cold and lazy to cook Thanks for the recipe :0)

ReplyDeleteMade this tonight and it was very good. Only thing I changed was I used 2 cans of pinto beans instead of black and kidney. I will make it again and next time I'll use mild rotel instead of original.

ReplyDeleteIn the crockpot right now! Didn't have taco seasoning so I added paprika, garlic powder and oregano. Also didn't have frozen corn only canned. No chilis so I added a bit of salsa. Frozen chicken breasts too. lol Hope it still turns out yummy.

ReplyDeleteI make this all the time. I'm not even on a diet it's just a really good easy recipe that we all really like (even the little ones). Its also super easy to modify with whatever beans/tomato product you have on hand. :)

ReplyDeleteI feel the same way about chicken in the crock pot so I put my meat thermometer in the biggest chicken breast and only cook until it gets to 165 degrees. My thermometer beeps when it is at temp so I just turn off the crock pot then. I feel it still gets the slow cook flavor but doesn't dry out.

I always boiled my chicken first then add with the other ingredients in the crock pot. Everyone loves it!

Delicious !!!! i added 1 can of Guinness Beer and chick peas,half the beans i drained and rinsed the rest just poured in... also did it on top of the stove... topped with cheddar and monterey jack cheese and sour cream.
ReplyDeleteps.. also used chicken stock to saute onions, garlic, and peppers. bake chicken in oven.
