Went to lunch at my in-laws on Wednesday, and of course had to bring some muffins! Had some peaches that I needed to use so tried this recipe! They were not too sweet and we loved them!
The Best Peach Nectarine Muffins (my changes in red)
1 1/2 cups flour
3/4 cup white sugar (used a little less)
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil (used canola)
1 egg
1/3 cup milk (used low-fat)
1 ripe peach (peeled, pitted, and diced) (used 2 peaches and no nectarine)
1 ripe nectarine, pitted and diced (or use 1 1/2 cup other fruit)
1/8-1/4 cup brown sugar (forgot to add this!!)
Preheat oven to 400 degrees. (350)
Grease 8 muffin cups or use paper liners.
In a large bowl combine flour, white sugar, salt, and baking powder.
Add oil, egg, and milk.
Stir only until blended together.
Fold in fruit.
Fill muffin tins to the top.
Sprinkle tops with brown sugar.
Bake 15-20 minutes.
