Ten on Tuesday

1. I should really work on my Ten on Tuesday on Sunday when I have a bit more time to write and remember what I did in the last week!!

2. After many weeks of rain, we have finally found the sun again! Feels so good to feel the warmth of the sun and to see all that light!

3. Having all that rain was bad for a lot of cities that are near lakes or rivers, but was good for the flowers and nature. Didn’t help my lawn that is full of weeds though!

4. My lilac is in full bloom – it smells so nice! Forgot to take some photos - will post some soon!

5. Went running a couple of times outside in the last few weeks. Still struggle to keep the pace and I don’t even try to follow Ben – he’s many many blocks in front of me! But I still enjoy the change of scenery which I don’t get on the treadmill!

6. I have been listening to a lot of “Run the World (Girls)” from Beyonce while running – great beat to move!

7. Every Thursday, they are giving Zumba classes outside near home – I am hoping it will be nice next Thursday – I so want to go!

8. I bought myself a Pandora bracelet during our long weekend in Ogunquit. Can you guess what my first charm is?... Can you? A cupcake, of course. I will take of photo soon! :)

9.  Last Sunday, we wanted to go for a walk at the Montreal Botanical Garden - got there and there were so many people, they had a special exhibit so we didn't get to go in :( Hopefully soon we will get to walk around!

10.  Still doing WW - still a struggle - especially during the weekends. I have gained and lost and am still about at the same weight but at least I am maintaining! :)

May Road Trip

Every May, we go on a road trip. A road trip that takes us near the ocean. A road trip that starts every Summer for us. We just came back from Ogunquit, Maine. It was a wonderful long weekend, though it was a bit grey and rainy most of the time.

Tea Party Lemonade Cupcakes

I love cupcakes (that is not big news here). My #1 choice is chocolate. But during the warmer weather, I would choose lemonade cupcakes as my #1!!

Made these for Ben's niece last weekend for her birthday. Baked two batches of cupcakes and that was one of them!

Tea Party Lemonade Cupcakes
from landolakes
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup sugar (used a little less)
1/2 cup butter softened
2 eggs
1/2 cup frozen lemonade concentrate, thawed (used pink lemonade)
1/4 cup milk (used low fat)

Frosting (halved the recipe)
 6 tablespoons butter, softened
3 cups powdered sugar
4 to 5 tablespoons frozen lemonade concentrate, thawed

Heat oven to 350°F. Place paper baking cups into muffin pan cups. Set aside.

Combine flour, baking powder and baking soda in small bowl. Set aside.

Combine sugar and 1/2 cup butter in large bowl. Beat at medium speed until creamy. Add eggs, 1/2 cup lemonade concentrate and milk; continue beating until well mixed. Reduce speed to low; add flour mixture. Beat, scraping bowl often, until well mixed.

Fill prepared muffin cups 2/3 full. Bake for 15 to 18 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely.

Meanwhile, place 6 tablespoons butter in medium bowl; beat at medium speed until creamy. Continue beating, scraping bowl often and gradually adding powdered sugar and enough lemonade concentrate for desired frosting consistency. Frost cooled cupcakes. Garnish with candy fruit slices, if desired.

Ten on Tuesday

1. It was Ben's niece’s birthday on Sunday. Haven’t touched my scrapbooking stuff in a while but decided to play a bit and make her a card.

2. She turned 18 and loves photography. Ben bought my old K100D for her. She was soooo happy! She already started posting a lot of photos on her Facebook!

3. I hadn’t used my fisheye in a long time. Decided to bring it downtown and this is what I got

4. I miss the sun! It has been raining every day since last Friday. Didn’t have time to mow my lawn and now my grass is so long – looks like a field.

5. The tulips are finally out – one of my favourite flowers!

6. My lilac is almost in bloom – a couple of more days in the rain and I am sure it will be filled with flowers!

7. Went for a run last Sunday (in the rain) with Ben. Didn’t even try to follow him – just went at my speed and ran for 30 minutes. It’s fun to run outside – but very hard to keep the rhythm!

8. Ordered some Zumba dvds – my gym gives some classes but too late at night for me. I did one class and I enjoyed it – can’t wait to try the dvds!

9. Long weekend coming up – it will be so wonderful to have some time off!

10. WW – back to normal. Gained back most of what I lost last week. I hate my metabolism!!
