Day 1

For those that tried to guess where we went on vacation.... (drum roll)....

We spent 7 days in Kitty Hawk, North Carolina and 2 days in Philadelphia.  A wonderful 10-day vacation!

It was a real road trip - 9 hours to get to Delaware where we slept the first night. And then another long day to get to Kitty Hawk (never knew there could be so much traffic to get to the beach!!)

Guess where we went...

Today is my first day back at work after 3 weeks off.  I had the time to clean, cook, bake and even go away!!  We went to two places, can you guess where?

Peach Muffins

Went to lunch at my in-laws on Wednesday, and of course had to bring some muffins!  Had some peaches that I needed to use so tried this recipe!  They were not too sweet and we loved them!

The Best Peach Nectarine Muffins (my changes in red)

1 1/2 cups flour
3/4 cup white sugar (used a little less)
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil (used canola)
1 egg
1/3 cup milk (used low-fat)
1 ripe peach (peeled, pitted, and diced) (used 2 peaches and no nectarine)
1 ripe nectarine, pitted and diced (or use 1 1/2 cup other fruit)
1/8-1/4 cup brown sugar (forgot to add this!!)

Preheat oven to 400 degrees. (350)
Grease 8 muffin cups or use paper liners.
In a large bowl combine flour, white sugar, salt, and baking powder.
Add oil, egg, and milk.
Stir only until blended together.
Fold in fruit.
Fill muffin tins to the top.
Sprinkle tops with brown sugar.
Bake 15-20 minutes.

Jean-Talon Market

Thursday, still on vacation, we got up early (as usual!) and went to Jean-Talon Market.  Love going there, especially at the end of the Summer, when all the veggies are cheap and oh so good!!

Lachine Cycling Tuesday
